Maria Mezcal de Oaxaca Anejo is 100% Espadin Agave, cooked in a sealed, stone oven fueled by wood logs. The juice is then extracted via Tahona and horse, and fermented (with the fiber) in wooden tanks. Maria Mezcal is then double distilled in a small stainless steel alambique with copper head and coil, the aged in barrels made of 80% American oak and 20% French oak for at least a full year, María Añejo is a full bodied mescal with aromatic and complex wood, vanilla, coffee, caramel and floral tones. This incredibly smooth drink has soft hints of dry fruits such as prunes and figs as well as chocolate flavors and is lightly smoky.
