Cold Climate - Kimura's sake is brewed during the snowy cold winters of Akita Prefecture in a process known as kan-zukuri or "brewing during winter." As the temperature of the unrefined sake is low, fermentation proceeds only at a very slow rate. The slower the fermentation is, the more sake loses its bitterness and develops a mellow flavor. It has a bright aroma combined with a hint of spice with a long dry finish.

Can be enjoyed either cold or at room temperature.
